Basmati rice is a type of rice grown in the Himalaya and Pakistan. It is long and becomes longer still when cooked. The rice is lighter and fluffier and does not stick together. Basmati rice is low in fat and fairly high in protein. According to the Canadian Diabetes Asociation, Basmati rice has a Medium glycemic Index (GI) of between 56 and 69, thus making it more suitable for diabetes as compared to certain other grains and products made from white flour.
